Gingerbread Baked Oatmeal

Ingredients

  • 1 cup unsweetened applesauce
  • ½ cup dark molasses
  • ¼ cup packed brown sugar
  • ¼ cup liquid egg whites
  • 1 tablespoon melted butter
  • 1 teaspoon baking powder
  • 2 teaspoon ground ginger
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • 2 cups milk of your choice
  • 3 cups uncooked old fashioned rolled oats

Instructions

  • Preheat the oven to 375 °F. Lightly spray a 9x13-inch baking dish with nonstick spray.
  • In a large bowl, whisk together the applesauce, molasses and brown sugar.
  • Beat in the egg and egg white with a whisk.
  • Whisk in the melted butter, baking powder, spices and salt.
  • Stir in the milk
  • Stir in the oats
  • Pour the mixture into the prepared baking dish. Bake for about 45 minutes. The oatmeal is done when the edges are golden-brown and when a toothpick inserted into the center of the oatmeal comes out clean.
