Preheat the oven to 375 °F
Spray a 13x9 inch baking dish with nonstick spray
Make the jam topping: bring 6 ounces of strawberries, 1 tablespoon of sugar, 1 tablespoon of chia seeds, and 2 tablespoons of water to a boil in a small saucepan. Cover the saucepan, turn the heat down to low and simmer for about 10-15 minutes. Depending how sweet the strawberries are, you might not need to add any sugar. The jam can be made up to 5 days ahead of time and stored in the fridge.
Whisk together the applesauce, peanut butter powder, eggs, maple syrup, vanilla extract, baking powder, cinnamon and salt
Stir in the milk
Stir in the uncooked oats
Stir in the strawberries
Pour the whole mixture into the baking dish. Spread ¼ cup creamy peanut butter and the prepared strawberry jam on top.
Bake for about 45 minutes, or until a toothpick or knife inserted into the center of the oatmeal comes out clean. If you used frozen strawberries, you might need to bake it longer (about an hour), so keep your eyes on it!
