Super-Protein Chef Salad

Ingredients

  • 12 ounces boneless, skinless chicken breast
  • 8 cups salad greens
  • 1 cucumber
  • 2 carrots (shredded)
  • 1 cup grape tomatoes (halved)
  • 1 green onion (chopped)
  • 4 hard boiled eggs
  • 3 ounces part-skim mozzarella, cut into cubes
  • 3 ounces reduced-fat cheddar, cut into cubes
  • 8 ounces precooked ham, cut into cubes
  • 1 avocado, cut into cubes
  • ¼ cup balsamic vinegar
  • 2 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon dijon mustard

Instructions

  • Preheat the grill to medium-high heat and cook the chicken breast (you could also poach it or pan-fry it, but I think grilling tastes the best)
  • Cut up all the other ingredients and toss them together
  • Mix the balsamic vinegar, olive oil, garlic powder and dijon mustard together to make a light dressing, and toss the dressing with the salad.
